As per the latest UCEED 2021 eligibility criteria, student must complete the 10+2 board exam in the year 2020EED 2022 Examination.
So, you are not eligible for UCEED 2021 Exam.

UCEED(Undergradudate Common Entrance Exam for Design) is an entrance test at national level organized for admission to undergraduate design courses. Students who secure qualification marks in the entrance exam will be successfully admitted to the B.Des program. The admission is given on the basis of UCEED scores to various participating institutions such as IIT Bombay, IIITDM Jabalpur and IIT Guwahati. This examination is available to both National Indian and Foreign candidates. The conducting body is IIT Bombay. A total of 16 institutes will also be using UCEED scores for their course admissions. It is conducted once in a year. The mode of exam will be computer based. To add on, To be eligible to appear in the UCEED 2020 list, applicants must be born on or before 1 October 1995, if they belong to the list open or OBC-NCL and if they belong to the category SC, ST, PWD, then they must be born on or after October 1990.The maximum number of attempts in consecutive years is to be two times. Applicants must have passed 12th class or equivalent in present appearing year or previous year. Students from all the streams are all eligible to take the exam. For 2020, the exam was finished in the month of January. So, you can apply for 2021. Remember you can't apply in the year 2022, because the eligibile year was limited to two consecutive years. Science stream candidates with physics , chemistry and maths, as subjects are eligible to apply for IIT Bombay, IIT Guwahati, IIT Hyderabad and IIITDM Jabalpur admissions. Candidates from any other stream, namely science without physics , chemistry or mathematics, commerce, arts, humanities, are qualified to apply to IIT Bombay and IIITDM Jabalpur only.

the basic eligibility criteria for UCEED 2021 is candidate must have passed their 10+2 from recognized board in the year 2020 and appearing candidate for same are also eligible , candidate who are from science stream without maths or physics or chemistry ,commerce and arts and humanities are applicable to apply for admission in IIT bombay , IIT hyderabad , IIT guwahati and IITDM jabalpur , candidate must born on or after october 1, 1996 and there is a relaxation of 5 years for reserved candidates , candidate can appear for same consecutively twice .

Hello student. Yes you can. The eligibility criteria to appear for UCEED exam is that the candidate should pass 12th/hsc examination from any board (cbse/state/icse) etc.
Since you are planning to take admission for engineering in 2020, you would have cleared your 12th board in 2020. So yes, you can appear for UCEED 2021
